
These are a little more difficult than some of the other things you might make…but, they are great and worth the extra time. They keep well and are best after three days in the refrigerator. This makes this a great party dessert. Try them I assure you will enjoy them and make them again and again once you master them.
8 oz S/S chocolate ~ I have always used Bakers for this
1 1/2 sticks unsalted butter
1 tablespoon cappuccino
2 teaspoons vanilla
1 1/2 cups sugar
4 large eggs
1 cup all purpose flour ~ unbleached King Arthur
1/2 teaspoon salt
2 cups chopped walnuts
Bake at 350
Butter and flour a 13 x 9 baking pan. Place parchment paper on the bottom of the pan.
Melt butter add espresso and chocolate and melt, let cool completely. In a standing mixer, mix sugar, vanilla add one egg at the time beating well after each egg is added until batter is nice and smooth. Add chocolate mixture and mix to incorporate. Stir in flour and salt until combined, then add walnuts. Spread batter evenly in pan and bake for 22-27 minutes. Do not over bake these will be hard and dry. Let cool completely before next step.
Cream Cheese Layer
8 oz cream cheese softened
1 stick of butter softened
1 box of powdered sugar
1 teaspoon vanilla
Beat cream cheese and butter until light and fluffy about 5 minutes.
Sift in powdered sugar and mix well until completely combined. Add Vanilla and spread evenly over brownie layer. Chill until firm about one hour then put on the next layer.
Chocolate Glaze
3 oz S/S chocolate
3 oz milk chocolate ~ I use a regular Hershey Bar
2 tablespoons butter
1/2 cup of heavy whipping cream
1 teaspoon espresso
1 teaspoon vanilla
Heat all together on low heat until melted ~ be careful stir
Cool a minute or two then pour over the cream cheese layer.
Cool about 3 hours slice and serve. Great make ahead dessert for party.
