My boys love these cookies. They are a really good cookie. They keep for a week or more really well. They are pretty and look great on a cookie platter or in a gift box.
Thumb Print Cookies
3 sticks of butter
1 cup packed light brown sugar
2 eggs separated
2 teaspoon vanilla
2 2/3 cups all purpose flour ~ sifted
3 cups finely chopped pecans
1/2 cup raspberry jam
Bake in oven at 350
Bake on parchment lined baking pans
Cream butter and sugars together until light and fluffy. Beat in the egg yolks saving the whites, vanilla and salt, then add the flour. Shape into one inch balls.
Take egg whites and beat with a fork in a small bowl.
I roll each cookie ball into the egg whites and then into the nuts coving well with nuts.
Place about 2 inches a way from each on the baking pan.
I press a well in the center of each cookie.
Place a small amount of the jam in the well of the cookie.

Bake for 12 – 14 minutes cool well and then remove. Enjoy…..
