Cavatelli with Spicy Italian Sausage

This is a great dish but I needed to work on the food styling for sure sorry…but sometimes ~ it smells so good these boys run up and say wow lets eat and they are digging in the dish before I get a good photo shot of it! Then some things are just hard to capture a good representation of and make look yummy! This is more about journaling my recipes that I want to save and keep to repeat and share with others so there you go ~ this is a great dish for a cold day! I make this with orecchiette pasta as well…pretty much taste the same just a little different shape pasta.

Cavatelli Pasta with Spicy Italian Sausage

1 bag of Cavatelli pasta
4 links of spicy italian sausage
1 cup dry white wine
2 tablespoons butter
1 cup of heavy cream
1/2 teaspoon red pepper flakes
3 tablespoons green sauce ~ recipe to follow
1 bunch broccoli
1 cup chicken stock ~ or veal
1/2 cup grated parmesan cheese

Make your green sauce directions are on another post look for green sauce under the search and you will find this recipe. This is a great sauce to just have around. Thanks Leslie!!

Take your sausage and open the links, use a small cookie scoop and make small balls of sausage. Place the butter and sausage in a large skillet until cook until each is nice and browned add your wine to deglaze the pan.

Then I add the chicken stock and cook this on high until almost all the liquid is gone from your pan. Then add your cream, pepper flakes and cook on a low simmer until it is thick and creamy. Once you add your cream start your pasta cooking in a large pasta pot with salted water. Cook until only to al dente will put it in with the sauce and cook for another minute or two. Cook your broccoli, I steamed mine for a short time only to just tender still with a little firmness. They will have some carry over heat and going to cook in sauce a minute more. Do not want the pasta or broccoli to over cook. Then once the sauce with the sausage is done add your green sauce, drained pasta and drained broccoli cook long enough to heat through one ~ two minutes no more. Plate and sprinkle with parmesan cheese… enjoy!!
