Raspberries and Chocolate Tarts with Pecan Crust

This is a great item to make for a Valentines Dessert. It is red and chocolate what could be better. It is fairly easy to make and it looks so pretty. I have been making this for many years. The pecans are such a large part of this dessert make sure they are nice and fresh. I am able to get really wonderful fresh local pecans, being from Georgia.

Raspberry Tart

2 cups of pecans
6 tablespoons brown sugar
1/2 stick of butter ~ melted
1/4 teaspoon cinnamon
3/4 heavy cream
6 oz bakers semisweet
2 pints of fresh raspberries
1/2 pint fresh raspberries
1/4 cup water
1/2 cup sugar
1 cup seedless raspberry jam 12oz
1 tablespoon Chambord

Preheat over to 325
Prepare a removable bottom pan. I butter pan really well, add parchment paper to bottom of pan.

Finely ground pecans, sugar and cinnamon in food processor. Once all is grinned evenly add the melted butter and process until moist clumps form. Press dough into bottom and up the sides of the pan. Pack down really well. Bake crust until golden brown about 25 minutes. Cool completely before next step.

Bring cream to simmer in a heavy sauce pot, remove from heat add chocolate and stir until melted and smooth. Pour chocolate into the prepared crust, smooth with offset spatula. Chill until set for at least one hour.

Top chocolate with fresh raspberries. Arranging in a nice pattern. Then top with raspberry sauce and chocolate shaves.

Raspberry Sauce
1/2 pint fresh raspberries
1/4 cup water
1/2 cup sugar
1 cup seedless raspberry jam 12oz
1 tablespoon Chambord ~ this makes it

Place raspberries and water in a small sauce pan. Bring to a boil and lower the heat to simmer for 4 minutes. Pour the cooked raspberries , the jam and Chambord into food processor with steel blade and process until smooth. Brush sauce on or pour with a squirt bottle and cover lightly but all over. Then I take a chocolate bar and grate in curls all over tart.
