We love these little cucumber sandwiches…they are the yummest! Every time I have a shower or summer party these are on the menu. I serve these little sandwiches and they disappear so quickly. I will replenish the platter and dang it they are gone again before I get the container put away…they are so good and so easy to make. Oh come on they are cucumber sandwiches but oh my they are so dee-lish.
Spread
8 oz room temp cream cheese
1/4 cup mayo or creme fraiche
1 clove minced garlic
1 tablespoon butter
juice of half a lemon
2 tablespoon fresh grated cucumber
3 tablespoons of fresh chopped chives
salt and pepper
dash of hot sauce
1 fancy fresh white bread
1 large cucumber sliced paper thin for topping sandwiches
1 tablespoon of chives chopped tiny for tops of sandwiches
Mix cream cheese, mayo/creme fraiche, butter, garlic, lemon, grated cucumber, chives salt, pepper and hot sauce until creamy and well mixed. I put this mixture in a pastry bag to pipe on the little bread rounds. I take nice fresh plain ole white bread and cut it in little fancy rounds. I used a scalloped 2 inch round for this photo. Pipe the cheese mixture on the little bread rounds, then top with a cucumber. Then top with a little more of the cheese mixture and more fresh chives. These can be made ahead ~ you will need to put a damp paper towel on top of the sandwiches to keep them soft and fresh. I wet a paper towel and squeeze all the water out and place on top. This is an ole southern trick to keep little finger sandwiches nice and fresh until your shindig.

Will try this recipe for a may bridal shower. The shower is at 11;00 am. Can I make them the night before ? And cover with damp paper towels and then cover with Saran Wrap?
Laura, Yes you can make the day before, I do this all the time. I make them in many shapes and sizes too. Cover with the damp paper towel and cover with either plastic wrap or a container with a lid. I make a little sandwich with basil cream and tomato that is also a big hit! Hope, you enjoy them as much as we do…let me know what cha think….smiles, Angie
