
This is one of my favorite cakes to make. It is a chocolate cake with a chocolate icing. It is chocolaty but not to overly chocolate or rich. It has a hint of coffee in it but not an over powering flavor. It is just right in every way….love it, love it!!
Chocolate Cake
1 3/4 cups all~purpose flour ~ King Arthur
2 cpus sugar
3/4 cup cocoa
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons baking soda
1 cup whole buttermilk
1/2 cup veggy oil
2 large eggs
1 teaspoon vanilla
1 cup fresh hot strong coffee
Line 3 – 8 inch cake pans with parchment paper ~ butter and dust with flour ~ preheat oven to 350
Ok, on this cake I throw all the rules away with this recipe and it works really well ~ I put all the dry ingredients in the mixing bowl with the whisk attachment and mix well ~ mixing all the dry until looks like a brownie mix ~ dry light brown color.
Then I add all the wet ~ start with the hot coffee then the buttermilk, then the rest of the wet ingredients ~ do not want to cook the eggs right ~ mix until all mixed ~ do not over mix ~ run a spatula around making sure all is mixed well. Pour into the cake pans and bake for about 35 minutes until a cake tester comes out clean. Cool on rack and then ice ~
Icing
9 oz semi sweet chocolate melted ~ I used Bakers S/S
3 sticks butter room temp
1 egg yolk- you can leave this out if it freaks you out
2 teaspoon vanilla
2 cups powder sugar
3 tablespoons hot strong coffee
In a mixer with paddle attachment ~ cream butter and sugar until light and creamy. Add other ingredients and mix well until light and fluffy ~ ice cake and eat! You can make as shown above which is a 3 layers.

This cake makes a great birthday cake too!

My daughter just had a birthday and I made a really delicious homemade yellow cake but now I’m thinking I should have made this one! With King Arthur’s flour and buttermilk, you can’t go wrong! i love love love baking en a nice spongy chocolate cake is my absolute favourite.i luv the fact that u mentioned that the chocolate is nt over-powering.may i ask,what is the purpose of the egg yolk in the icing?
Lungile….the egg yolk makes the icing so rich and creamy. You do not have to have this in the icing if you are worried. Hope you love it! Let us know how it came out for you. Happy Baking !
